Pumpkin Recipes: A Little Mission To Cosy Up Your Autumn.

It’s Pumpkin Season! Here’s a little mission for you to try this week: three heartwarming pumpkin recipes to tickle your tastebuds and they’ll solve your dilemma of what to do with your pumpkin flesh once you’ve carved your pumpkins.

Love foods in season? Butternut squash works just as well too!

Pumpkin Soup Recipe

This velvety, naturally creamy soup adapted from Good Housekeeping, keeps well for a day or two in the fridge.

Ingredients

850g pumpkin or squash, peeled and cut into 2-3cm chunks

200g banana shallots, skin on, halved lengthways

1 small head garlic, skin on top cm sliced off

3 sprigs rosemary

2 teaspoons dried chilli flakes (optional)

4 tablespoons extra-virgin olive oil

 Sea salt and freshly ground black pepper

750ml good chicken or vegetable stock, plus extra if needed

For the Garnish: 3 tablespoons pumpkin seeds and 1 teaspoon extra virgin olive oil.

To Serve: 100g crumbly goats, fresh rosemary, toasted pumpkin seed oil (optional) with chucks of granary bread.

Method

pink star indicating a point Heat the oven to 180˚C/fan oven 160˚C/mark 4. Scatter the pumpkin in a large roasting tin with the shallots, garlic-cut-side down – rosemary, chilli (if using), olive oil and seasoning to toss to coat in the oil.

pink star indicating a point Roast for 45 minutes until mostly tender and golden in places, but not too browned – if it starts to brown, cover with foil. For the garnish, toss the pumpkin seeds on a baking tray with the olive oil and toast in the oven for 5 minutes. 

pink star indicating a point When the pumpkin is ready, remove the rosemary – reserve for a garnish unless blackened – and squeeze the softened garlic shallots from their skins into the roasting tray, discarding the skins.

pink star indicating a point Heat the stock in a saucepan large enough to fit the pumpkin, then add the contents of the roasting tray and simmer for 15-20 minutes.

pink star indicating a point Blend to a smooth purée using a stick blender, thinning with more hot stock if necessary. Alternatively, cool slightly and blend in batches in a jug blender or food processor (a processor won’t give as smooth a result).

pink star indicating a point Reheat gently to serve, season and ladle into warm bowls. Crumble over the goats’ cheese and scatter with pumpkin seeds. If using, break over the crisp rosemary needles and drizzle with a little pumpkin-seed oil. 

Food can bring people together in a way nothing else could.

Roasted Pumpkin Wedges Recipe with Chestnut, Cinnamon and Fresh Bay Leaves.

A simple and gratifying dish from Ottolenghi looks fabulous and is very easy to make.

Lay out on a flat serving dish and bring to the table. It doesn’t get much more Autumnal than this (and would be perfect at Christmas too!) A super addition to almost any main course.

Ingredients (serves 4-6)

1 medium pumpkin, about 1.3kg

6 tbsp olive oil 

4 cinnamon sticks

4 tbsp maple syrup 

3 garlic cloves, crushed

20 fresh sage leaves

10 fresh bay leaves

Salt and black pepper

150g cooked chestnuts

Method

pink star indicating a point Preheat the oven to 200C/400F/ gas mark 6. Cut the unpeeled pumpkin into wedges (1-2cm at the thick end) and discard the seeds; leave the skin on.

pink star indicating a point In a large bowl, toss the pumpkin pieces with four tablespoons of olive oil, the cinnamon, three tablespoons of maple syrup, the garlic, sage, half the bay leaves, and salt and pepper.

pink star indicating a point Lay out in a single layer in a large roasting tray and roast for 20-25 minutes, until the pumpkin is soft and golden. Add the chestnuts five minutes before the end.

pink star indicating a point Arrange the tray’s contents on a serving platter and scatter the remaining bay leaves over the top. Stir together the remaining syrup and oil, and drizzle on top. Serve warm.

Pumpkin Pie Muffins Recipe

Pumpkin Pie Muffins

These muffins are easy to make and will fill your kitchen with the wonderful smell of autumn. Moist, fragrant, gluten-free muffins. Perfect for family snacks or after activities.

Ingredients

¼ teaspoon sea salt

½ teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

1 cup fresh baked pumpkin (or winter squash), well packed

¼ teaspoon ground ginger

1 pinch ground cloves

2 tablespoons rapeseed oil

½ cup agave nectar

2 large eggs

Method

pink star indicating a point In a large bowl combine almond flour, salt, baking soda, cinnamon, nutmeg, ginger and cloves

pink star indicating a point In a food processor,  puree the oil, agave, eggs and pumpkin until smooth. Add the remaining ingredients and stir well.

pink star indicating a point Spoon the mixture into muffin cases Place paper liners in muffin pan and bake at 350° for 40-45 minutes

pink star indicating a point Cool for 2-3 hours (if you can wait that long!) and serve.

These treats are perfect after a training run or after the children’s football or rugby training or even as a little snack whilst relaxing over the papers on Sunday.

A Little Mission – The Pantry Makeover And Organisation

A little mission – pantry makeover and organisation. What I did so our kitchen worked more effectively for us as a family. We all have our systems in place and I’m sure you have your own too, however incase it helps, I thought I’d talk you through what I did to organise our kitchen and pantry cupboards.

I always enjoy a good old spring clean and declutter and it seems I’m not on my own – thank goodness! Spending a year in Lockdown has meant we’ve looked at our spaces differently and in my case, decluttering at the beginning last March and now again a year on!

Clear the clutter so you have room to see the potential in front of you.

Moving Day; the back story.

To give you a little back story, when we moved into our home, the children were still young, I was running my Fitness and Wellbeing business and up at 4.15am every morning and my husband also has a busy job! Not unusual, I hear you say..

Moving in day was equally busy. I picked up our new keys at midday, having run two busy fitness camps for my clients at 6am and 9am. We had until the 3.30pm school pick up to get the majority of the work done. Essentially I was keen to at least make the childrens bedrooms and the living areas livable! Yes my #PowerofanHours were in full swing, even then!

Obviously in an ideal world, we’d have looked at the space in our kitchen and worked out logically where everything should live. We didn’t, we simply unpacked the boxes (in an organised manner as possible) and that was that, back to our crazy busy lives, excited to be in our new home. It worked.

Lockdown bought a new vision

Over the years, I’ve decluttered and moved things around but one of the positives this Lockdown has given me was to really look at our space, how it functioned, or didn’t and plan accordingly.

It’s been a huge lightbulb moment for me, having the brain space and time to be objective, yet creating spaces behind the doors that work so much more effectively for us as a family. I cleared a space in my diary and the “Little Mission -the pantry makeover and organisation” commenced!

First things first with the pantry organisation..

I started with one cupboard, where we store our hot drink ingredients, thinking I’d remove the items that were out of date or no longer served the family and simply replace back in the cupboard.. However, on closer examination, I realised that this cupboard also now hosted items we used for entertaining & baking.

Most of the items were already in storage jars but overtime it had become disorganised and cluttered, not only that but our mugs were over the other side of the kitchen. Not a good use of space or time, just to make a cup of coffee! Now I know this sounds silly, I’m sure many of you already have a “hot drinks station” as The Home Edit call it, but remember we moved in and went with the flow!

The top shelf now stores a basket with a stock of fruit teas, together with a storage jar of filter coffee and the cafetière. the second shelf now hosts our mugs and the bottom shelf hosts the teas, coffees etc that we use regularly. Our kettle lives directly under this cupboard and it works really well! Simple things eh..?

The System

Powered on, I turned my attentions to the pantry cupboards and adopted the same process.

Remove all items.

Discard what’s out of date or your family no longer need or use.

Wash all storage containers and wipe cupboards.

Assess the space.

Consider what you need to complete the job. Labels? Jars? Adjust the shelf heights?

Refill storage jars and place back where they suit you, your family and your lifestyle.

Things I found useful to consider when starting a pantry organisation.

Where you cook, where you prepare the packed lunches, which items you use more than others. It took me until recently to realise that I stored my flour on the top shelf, with all the baking ingredients, which meant I’d have to jump onto the worktop to reach it – Every. Single. Time!! Why it didn’t occur to me to have a reshuffle and move these items to a lower shelf was purely because I didn’t give it another thought!

Plan your layout!

I’m an old fashioned kind of girl and when the brain goes round and round in circles, I write it down. This new system needed to work, I wanted to have a space that was efficient, yet looked elegant and that worked for everyone, keeping the upkeep to a minimum. (Our longed for kitchen renovation is still in the “dream stage” but this process all helps for when the planning becomes a reality.)

I drew the kitchen and cupboard layout on a piece of paper and reassessed which storage jars and labels I needed and where they would go. By writing it all down, having an old fashioned “brain dump” cleared the fog and I could get a clearer perspective. A good thing when you are short of time!

Divide the kitchen into “Stations”

I’m sure if I shared my steps in the kitchen before the pantry makeover and organisation, you’d giggle. Everything was so far away from each other.. The honey lived in a cupboard far from the toaster. The herbs were in a cupboard on the other side of the kitchen away from the oven.

Having stopped and reassessed and framed this process as “creating stations”, it really simplified everything and made it easier to organise.

Remove the emotion from decluttering your items.

How many of us keep items because they have sentimental value or because they were expensive? You may remember in last weeks blog, I shared a game our family started “yes, no, go” last year. It really helps to make a quick decision about what stays and what goes. Having a Kitchen and pantry refresh means you can get radical.

Those plates that are chipped and you no longer use? They go!

Electrical items that no longer work? Get them fixed or they go!

Children’s cups and plates they used when they were toddlers but they’re now married and no longer live at home? If you can’t bare to get rid of them, pop them in a box (labelled obviously) and store in the attic. You get the idea!

What to do about remembering expiry dates?

Now you’ve removed all the unsightly packaging, how are you going to remember what expires and when? What if you have family member with allergies and need to know the ingredients on the items you’ve now lovingly stored in jars? I cut the expiry dates off the packaging and taped them to the bottom of the lid of the jar or under the jar depending on where the jar was in the cupboard. I didn’t want to see the tape!

I can honestly say that the Little Mission – The Pantry Makeover And Organisation has made a huge difference. The cupboards and pantry certainly “Spark Joy” and life is even more efficient. I was asked last week, how did you get the time to do this? I simply blocked an hour at a time. worked on a cupboard at at time. You know I’m a big fan of my #powerofanhour and blocking out time. In the long run you’ll save time and had a huge sense of satisfaction. A big win all round don’t you think?

Finally

Forgive me if you’ve read this blog and thought “I can’t believe she’s sharing this, it’s obvious!” You wouldn’t be wrong! I have to say, we all lead busy lives and sometimes the simplest of things such as having your mugs next to your coffee can get over looked. Priorities take over.

I hope that a step by step walk through of what worked for me, might be useful for you and your pantry makeover and organisation too.

5 Books you need to create a beautifully organised home.

I love to be organised and find lots of inspiration from Instagram and books. This blog shares with you my top 5 books for home organisation.

During the Pandemic, sales online in garden centres, DIY stores, supermarkets ( including wine!) have soared as many of us have used the Lockdown Year to redecorate and use the space in our homes more effectively. Dining rooms have turned into classrooms, kitchen tables have turned into offices, gardens (and parks when we were allowed) turned into mini holiday venues, if only for an hour or two!

One of the first things I did during Lockdown 1.0 was declutter every cupboard in my kitchen – rock and roll, I know!! It sounds crazy, but actually having a little headspace and time to think “that really doesn’t work there and I have a solution” as opposed to “that doesn’t work there but I don’t have the time or the inclination now to figure it out” I hope I’m not alone!

If you follow me on Instagram, you may have seen the progress I made – a year on and thanks to a busy household, a new declutter and reorganisation was required as we evolved as a family. More on that next week!

The Pandemic increased our need for Netflix and neat homes!

I wonder what you’ll remember most about the Covid years as we look back in 3 or maybe even in 10 years’ time?

During the summer months, my decluttering turned to makeover projects, and we also discovered Netflix – please don’t judge, hehe! Pre-COVID, I spent every evening driving to and from Swim training with my children – if you are a swimmer or swim parent, you’ll totally understand that watching any television is an absolute luxury! Netflix pre-COVID was something that sounded great, but again, no headspace to think about organising or when we would watch it – oh how times have changed – for now!

With Netflix and more time on our hands came the discovery of programmes that were just up my street – organisation and decluttering your home. Wow, has this craze really taken off! I’m always having a little faff at home with my husband asking, “OK, I give up, where have you hidden….?”

Or, “That’s nice, is it new?” No, I’ve simply moved said item from another room!

Spark Joy was the first book about tidying I’d ever bought, years ago. It seemed a little odd, we all know how to tidy, yet the cover first drew my attention, then flicking through the pages. I knew it would be useful.

Marie has introduced us to her now world renown KonMari tidying method, which is to focus on what you want to keep, not what you want to get rid of.

This book covers every room in the house as well as a wide range of items, including photographs, cutlery and valuables. The book is one of a kind. It inspired a family game we lovingly call “yes, no, go!” when I was helping the children declutter their rooms when they were much younger.

Ask yourself if something ‘sparks joy’ and suddenly it becomes so much easier to understand if you really need it in your home and your life. When you surround yourself with things you love, you will find that your whole life begins to change. 

Beautifully Organised – A Guide to Function and Style in Your Home Nikki Boyd.

I bought this book literally two weeks before we went into Lockdown last March, not only does it look beautiful on the coffee table, but Nikki has shares her wealth of experience and best advice for how to create an organised, beautiful and welcoming home. Nikki developed and honed her five essential steps to an organised home through her experience working as a professional organiser. In her book, Nikki teaches you to: assess your home to transform the spaces within to enhance your lifestyle; declutter and curate your possessions to keep what is useful and meaningful; clean with efficiency, adding an element of pleasure to everyday tasks; organise so you can find what you need, when you need it; and beautify and decorate to create a welcoming atmosphere for family and friends. (Imagine when we can finally welcome family and friends to our homes again!)

If there is anyone that I would love to come and spend a few days at my home to help me style and, yes, OK adopt as a friend, it would be Shea. Her style and flair for knowing what looks amazing where and how to turn an interior vision into a reality is second to none. Having watched the Dream Home Makeover series on Netflix, practically back to back, whilst decluttering my home office, I can honestly say that I loved every single makeover and home Shea and her team created for their clients.

Make Life Beautiful is a real behind the scenes account of how this powerhouse of a couple first met and turned their dreams into a reality.

Sharing golden nuggets of how they prioritised their values, defined their goals and put their dreams into action, going from not having a penny to their name to becoming interior design superstars, all while following their motto to “make life beautiful.”

I love this book, the backstory of how the McGees met and how they built such a successful company but also be inspired to build an authentic life by applying design principles such as embracing the process and finding the balance.

The Home Edit – Clea Shearer and Joanna Teplin

Clea and Joanna are literally girls after my own heart! I only found out about The Home Edit within the last 6 months care of Netflix, and I’m kind of obsessed! Yes, I’m the one who, when I’ve completed a project, even if it’s a cupboard and no one can actually see it, I feel the need to share with the family, oh and maybe Instagram!! The Home Edit certainly Sparks Joy!

Again, like all the books I’m sharing with you, it’s a beautifully photographed book. The Home Edit divided into three simple sections:

The Edit, The Assembly and the Upkeep.

They are quoted as saying “if we can do it, so can you” and with this very handy guide, it’s certainly true. No, you don’t need to go and buy zillions of jars, labels etc (and yes of course they have their own products, which are stunning!) but they key is having a system in place, bringing everything together, keeping things simply that can help you “conquer the clutter with style.” This book actually has a starter set of labels to help you create the look below in your fridge. Fabulous!

The Home Edit – Life – Clea Shearer and Joanna Teplin

This book is basically part two to The Home Edit. Now you have the basic systems in place, Clea and Joanna talk you through how to harness these systems to all aspects of your life, not just your fridge and pantry!

Having used these systems for a number of months now (and I thought I was organised!) I can safely say that The Home Edit has made life simpler, less cluttered, and it’s a joy to open any cupboard now. Well, mostly, I still have a few to go, but I’m certainly in a more systemised place than this time last year. It’s the little things that make the big things come together!

I really hope you enjoy these books as much as I have. It really does make a huge difference having an organised home, whether it be your linen cupboard, kitchen, or the drawer in your console table in your hallway, not just because everything is in it’s place and easily found but I find having a clear decluttered space, I can work more effectively too, my brain is a little less muddled too! With Valentine’s Day just around the corner, I thought I’d share some thoughts and ideas about sharing the love – not just to those you love but to YOU too! 

Valentine’s Day, also called Saint Valentine’s Day or the Feast of Saint Valentine and is celebrated annually on February 14. It originated as a Western Christian Feast Day, honouring one or two early Christian martyrs named Saint Valentine and is recognised as a significant cultural, religious, and commercial celebration of romance and love in many regions of the world.

What do you traditionally do on Valentines Day? Go all out, with chocolates, flowers and a meal? Or ignore the whole event?

As a couple (seeing as my Birthday is the day before Valentines Day) we don’t usually have a big celebration on the 14th February! The teasing he got whenever we went out for a meal on the 13th “Getting the brownie points in early Sir??” or “Don’t blame you, going out the night before, much cheaper!!” were usual questions! Not annoying in the slightest!

We often think that Valentines Day is for the young lovers and some possibly would think this day is even a commercial gimmick but this year, I believe we could all do with a little more love and a little less worry, judgement, no huge gestures required – the pandaemic has changed so much of our lives and we appreciated the little things so much more, don’t you think?

Valentine’s Day in Finland, called ystävänpäivä which translates into “Friend’s Day”. As the name indicates, this day is more about remembering friends, not significant others.

So with this in mind, here are some thoughts that you could treat yourself, your partner or even your best friend, to let them know you are thinking of them and that you care x x

You know I’m an absolute lover of sending Happy Post, I adore finding new brands and I’ve found The Toasted Crumpet and more recently Hip hip Hooray and am so pleased I have. Why not use this opportunity to send a card to someone you’ve not seen for a while or pop a card in the post to arrive in your home? I love the idea and traditions from Finland and might introduce that this year and beyond. What do you think?

Bubble Baths or Spa Days aren’t for everyone – sometimes I struggle to sit still too! A relaxing bath, add candles, a good book, maybe even a glass of something lovely…! Lock the door and enjoy a few moments peace! Remember to leave your phone outside!

I currently loving the idea of a creating home spa. A gorgeous bath, comfy clothes, maybe even a DIY manicure, body scrub or mini facial! They won’t break the bank, leaving you feel a million dollars!

I’ve been a huge fan of Catherine D’Crovecoeur for quite some time and adore her new collection “Amour Toujours” (Love Always) launched just yesterday. £1 from each pair of earrings sold from the “Amour Toujours” collection will go to the Women’s Aid Charity, helping to keep women and children safe from domestic abuse.

I also love the idea of a Jar of Dates.. Scribble some ideas of dates where you and your nearest and dearest love to go and pop them in a jar.. WHEN Lockdown is finally over and we can head back into a little normality, take it it turns to pick a date from the jar and enjoy! A fun thing to do with the family too!

Registering as a Donor A blood cancer diagnosis is a shock and often marks the start of a race against time. For many patients, their only chance of survival is to find a matching blood stem cell donor, as fast as possible. That is why donor profiles with all the relevant information, along with the best possible processes, are so important. With Valentines Day in mind, how about ending a hand in the fight against blood cancer by hosting a virtual #LetsNailBloodCancer party!

 The money you raise at your party will help DKMS register more donors who could be a match for a blood cancer patient in need. Host a virtual mani-pedicure party for family, friends and colleagues. Taking part is easy and fun! #LetsNailBloodcancer together.

I’m sure if we asked any parent who’s been home schooling, working at home or a key worker – (in fact anyone!) these last few months what they’d love most, I’m sure a lie-in, time to read their favourite book or watch their favourite episode without interruption would feature quite readily on the list! I know it’s on mine!

The Gift of Time is precious and cost nothing! The world doesn’t always have to turn at a million miles an hour, agreed it is hard to get off the treadmill of life at times! Use this day to treat yourself or those in your household, the 14th February is a Sunday after all!

How To Have A Digital Detox..

When did you last have a proper Digital Detox..? I don’t mean time away from your phone, although it is good to reduce screen time, but I mean in the sense of decluttering the ‘stuff`’ that builds up on our laptops, phone, address books and so on..

During this difficult time of lockdown there is inevitably a lot of people feeling anxious, overwhelmed and ultimately perhaps even unhappy. In this series of blogs this month, I’m sharing my thoughts with you on how to remove the things in life that aren’t serving us, in order to move forwards and (In case you missed a previous blog asking what you’re letting go of in 2021, you’ll find it here.)

During Lockdown, many of us had a good old declutter of our homes and this week I’m sharing that it’s very therapeutic to do the same with our digital lives too. By doing so, we will spend less time searching for photos to use on our blogs or social media, less time looking for that password, and everything will work more efficiently.. even you!

I’m an old fashioned girl and those that know me will know that I’m a huge fan of stationary, planners and sending cards or happy post as I like to call it! It’s always so lovely to receive a card in the post rather than that ominous white envelope right?

When did you last update your address book?

Do you go to it like I did leading up to Christmas and find that several addresses have been changed, maybe not once, but two or three times! Or maybe even (also like me) several pieces of paper or an old Christmas card fell out with a new change of address notice… yes? Then time, to declutter that address book and renew.. everything will be fresh and clear, saving you time! A lovely thing to do on a Sunday afternoon.

Here are some I’m loving at the moment:

When did you last do a health check on your computer or lap top?

It’s open of those jobs that used to terrify me as I’d think I’ll lose everything but it really is essential so that it works much more efficiently. If there is a problem with the health of your computer, it can be diagnosed and addressed it before a parts failure or more serious fault occurs. This includes checks for viruses or spyware, which can lead to data corruption, identity fraud, and theft. Scary huh??

I have started using Clean My Mac recently and love it.. It’s fast, super efficient and has freed up lots of space that was slowing things down. It also removes apps that you no longer use and so much more!

When was the last time you decluttered your Notes on your phone?

I love my the notes app on my phone, especially during the days we were allowed to leave the house! If a moment of inspiration hit me, out came my notes and I’d pop it down for when I got home or when I was next writing.

However, they can quickly mount up and spending just a few moments, whilst the kettle boils or your bath runs, to edit and delete the ones that are no longer required or serve you, will free up so much space both on your phone and head space too!

Use this time to create new folders so that the speed in which you find your wise words is quicker rather than endless scrolling.. One of those jobs that you think, “yep, I’ll do that” but it does make so much difference and guess what your screen time will be reduced too! Winning!

Decluttering your Digital life will allow you more time for things you really enjoy.

These are a few ideas to get you started on your Digital Detox. Here are a couple of others that I have planned through the coming months..

Messages; both on my phone, WhatsApp and various other platforms that I receive messages. I have several that I mean to delete that’s taking up space, how about you? now I’ve shared that little gem with you, I’m going to be popping that little task to do over the next week rather than scrolling. Will you be joining me?

Photographs.. hands up if you have zillions on your phone? I’m not even going to share how many I have! Many are duplicates I’m sure. Some need deleting, some need printing and for certain, there are many that need fitting in albums so they are easy to reach and at my finger tips should I need to find them.

One app that we have loved using this year is Photobooks and it’s sister FreePrints. The phonebooks make fabulous gifts and are really easy to organise (even easier when you know exactly which photos are where!) We’ve organised a few this year and not only is it lots of fun deciding which to choose but so lovely to have them in a book also. It’s like the modern day photo album!

The Freeprints are also fantastic, again very quick and easy to use. My daughter and I had lots of fun creating a photocell of all her favourite images during her room makeover in Lockdown 1.

If all this seems overwhelming, it’s okay. Bit by bit, little by little, day by day just attempt ONE thing.. You don’t have to do it all now! Pick one this week and see how you get on. You might be inspired to do more, you might even be inspired to schedule a Digital Detox in each month.

I really hope these tips for bringing a little positivity to the situation we find ourselves in help you.
